The Knife Holders clamp blades securely across the Holder's full length. The adjustable collar on the Holder arm will allow different bevel settings to match the knife type - from a steep angle for carving knives to a shallow angle for a fish filleting knife. England

Set Includes: A Small Knife Holder; Back Plate; Wear Plate. Universal Arm; and Instructions. Holders are also available separately so you can upgrade your existing set to to handle the opposite size just by adding the appropriate holder.
